Tips For Making The Best Hazelnut Zucchini Apple Cake

Use a springform pan. If you use a regular cake pan, it will be harder to remove the hazelnut zucchini apple cake from the pan. Removing the hazelnut zucchini apple cake from a springform pan is much easier. 

Spray your spring form with a non-stick cooking spray pan generously. Gluten-free cakes can stick to the pan, so spray it well and line it with parchment paper. Additionally, spray the parchment paper with non-stick cooking spray. The non-stick cooking ensures the cake does not stick to the pan. 

Gently press most of the moisture out of the zucchini. The goal is to remove some water from the zucchini but not all the moisture. The zucchini adds moisture to the cake, so if you remove all the moisture, the cake will be dry and crumbly. 

I used a cheesecloth to press the excess moisture out of the zucchini. However, you can use a clean kitchen towel. 

If the hazelnut zucchini apple cake gets too brown, loosely cover it with foil. The foil prevents the cake’s exterior from browning too much while the interior cooks.

Hazelnut zucchini apple cake is the perfect easy-to-make dessert. Hazelnut flour, shredded zucchini, and sliced tart Granny Smith apples come together to make a moist and delicious cake. This is gluten-free cake so addicting that it will be hard to eat one slice.

Ingredients

  • 1 1/4 cups hazelnut flour

  • 3/4 cup almond flour

  • 1 tablespoon baking powder

  • 1/4 teaspoon kosher salt

  • 1/2 teaspoon xanthan gum

  • 1 1/2 cups sugar-free sweetener

  • 1/4 cup coconut oil

  • 1/2 cup almond milk

  • 1 teaspoon vanilla extract

  • 2 large eggs, room temperature

  • 2 1/2 cups grated zucchini (1 large or 2 medium zucchini) (see notes if you are using a large zucchini)

  • 1 large or 2 medium Granny Smith apples, peeled, cored, and sliced thinly

Directions

  • Program your oven to 325˚F. Next, spray a 9-inch springform pan with non-stick cooking spray. Next, line the bottom of your springform pan with parchment paper, then coat it with nonstick cooking spray.
  • Whisk the hazelnut flour, almond flour, baking powder, salt, and xanthan gum in a large bowl until combined,
  • Whisk the sugar-free sweetener, coconut oil, almond milk, vanilla extract, and eggs in a separate bowl until combined.
  • Add the wet ingredients to the hazelnut almond mixture and stir until combined.
  • Fold the shredded zucchini into the hazelnut zucchini apple cake batter.
  • Pour the hazelnut zucchini apple cake batter into the prepared pan.
  • Arrange the Granny Smith apples on top of the hazelnut zucchini apple cake batter.
  • Bake the hazelnut zucchini apple cake for 35-45 minutes until a skewer inserted into the cake comes out clean.
  • Let the hazelnut zucchini apple cake cool completely. Next, run a butter knife around the hazelnut zucchini apple cake’s perimeter to remove it from the pan.
  • Unlock the pan, remove the ring and slice the hazelnut zucchini apple cake into 8-10 slices.
  • Serve and enjoy!

Notes

  • If you use a large zucchini, scoop the seeds out of it before you shred it.
