What Is Teff Flour? 

Teff is a member of the Poaceae grass family. This tropical grain is indigenous to Ethiopia and Eritrea, which is believed to be teff’s ancestral home. These vanilla pecan ricotta pancakes are deliciously rich yet tender and perfect for a tasty breakfast or brunch.

Ingredients

  • 2 tablespoons monk fruit sweetener

  • 1 1/3 cups whole-milk ricotta cheese

  • 4 large eggs

  • 3 tablespoons melted unsalted butter

  • 2 teaspoons vanilla bean paste

  • 1/4 cup teff flour

  • 1/4 cup brown rice flour

  • 1/2 cup almond flour

  • 2 tablespoons oat flour

  • 1/2 teaspoon fine sea salt

  • 1 teaspoon baking powder

  • 1/4 teaspoon baking soda

  • 2 tablespoons butter

  • 1/4 cup pecans, chopped

Directions

  • Whisk the monk fruit sweetener, ricotta, eggs, melted butter, and vanilla bean paste in a large bowl.
  • Place the teff flour, brown rice flour, almond flour, oat flour, baking powder, baking soda, and salt in a large bowl.
  • Add the gluten-free flour mixture to the ricotta mixture and stir just until incorporated.
  • Place a griddle or skillet over medium-high heat. Spread a little butter onto your griddle or skillet and add about a ¼ cup of pancake batter to the griddle leaving a 1/2-inch of space between each pancake.
  • Cook the vanilla pecan ricotta pancakes for 2-3 minutes until bubbles form around the edges of the pancakes.
  • Sprinkle the chopped pecans over the pancakes, turn the pancakes over and cook for an additional 1-2 minutes until golden brown on the other side.
  • Serve and enjoy!
