You can’t go wrong with yellow rice. It’s the perfect side dish. It brightens up any dish you serve it with. Whether you serve it with stew, roasted vegetables, or meats, it will pair well with many dishes.

What Is Yellow Rice

Yellow rice is a flavorful rice. It’s made with turmeric or saffron, which gives the rice its yellow color. These spices also give the rice an aromatic flavor.

Yellow rice is a popular side dish. It’s found in Caribbean, Latin American, Indian, and Middle Eastern cuisines.

Ingredients

  • Rice – Basmati rice works well with this recipe. But you can use Jasmine rice or any other long-grain white rice.
  • Turmeric – Turmeric gives the rice it’s yellow color. So it’s very important. But if you’re not a fan of turmeric, use 10 strands of saffron instead.
  • Onion, Bell Pepper & Garlic – Don’t skip adding these ingredients. Fresh onions, garlic, and bell peppers add so much flavor to this rice.

How To Make

Put the olive oil in a large pot. Heat it over medium-high heat.

Put the onions and bell peppers in the pot. Cook them for 2 minutes until they soften.

Add the garlic and turmeric. Cook for 1 minute until fragrant.

Add the rice. Mix to coat it with the turmeric. Cook the rice for 1 minute, mixing frequently until it’s toasted. Don’t skip toasting the rice. It adds so much flavor.

Stir in the vegetable broth and seasonings. Let the rice come to a boil, then cover it, turn down the heat to low, and cook it for 25 minutes.

Turn off the stove, and add the butter to the rice. Cover it and let it sit for 5 minutes.

Remove the lid from the rice. Fluff it using a fork, then sprinkle the dried parsley on top before you serve it.

Variations

  • Add vegetables: Add fresh vegetables like mushrooms. You can also add frozen vegetables like mixed veg or peas and carrots to the rice.
  • Add chicken: Sauté diced chicken breast or thighs before you add the onions and bell peppers.
  • Use Brown Rice: Make this yellow rice with brown rice instead of white rice. It’s much healthier. Note: You may have to adjust the cooking time based on the package directions.

Tips

  • Wash the rice before you make this yellow rice recipe. It will remove some of the starch. Wash it at least 4-5 times until the water is clear.
  • Once you add the butter, let the rice sit for 5-10 minutes before you fluff it. The rice will have the perfect texture.

Storing & Reheating Yellow Rice

Place leftover yellow rice in an airtight container and store it in the fridge for 4-5 days.

You can reheat it in the microwave for a few minutes until warm. You can also reheat it on the stove. Place the yellow rice in a small pot and add a few tablespoons of water.

The water adds moisture to the rice. It creates steam and rehydrates the grains. In other words it helps bring back the rice’s fluffy texture.

Heat it over low heat until the rice is warm.

Ingredients

  • 2 tablespoons olive oil

  • 1/2 medium onion, small dice

  • 1/2 medium bell pepper (red, yellow, or orange), small dice

  • 2 cloves garlic, minced

  • 1 cup long-grain white rice (I used basmati rice)

  • 2 teaspoons ground turmeric

  • 2 cups low-sodium vegetable broth

  • 1 teaspoon kosher salt

  • 1/2 teaspoon black pepper

  • 3 tablespoons butter, cut into small pieces

  • 1 teaspoon dried parsley

Directions

  • Place the olive oil in a large pot. Set it over medium-high heat.
  • Add the onions and bell peppers. Cook them for 2 minutes.
  • Add the garlic and turmeric and cook it for 1 minute.
  • Add the rice. Stir to coat it in the turmeric. Cook it for 1 minute, stirring often until the rice is toasted.
  • Add the vegetable broth, salt, and black pepper and stir until combined. Let it come to a boil, then decrease the heat to low, cover it, and cook for 25 minutes.
  • Turn off the heat, and sprinkle the butter pieces evenly over the rice. Cover it and let it sit for 5 minutes.
  • Fluff the rice with a fork. Garnish it with dried parsley before serving.

  • Wash your rice with cold water 4-5 times until the water is clear.
