Spiced candied almonds are hands down one of the best snacks. The sweet flavor, crunchy almonds, and warm spices are a match made in heaven.

They also make the perfect holiday gift. So, if you’re looking for last-minute gift ideas, make this spiced candied almonds recipe. Anyone who tastes these candied almonds will want to know the recipe because they are just that good.

Ingredients

You only need a few ingredients to make these candied almonds.

  • Brown Sugar: I used brown sugar because it’s what I had on hand. You can use a brown sugar substitute if you want to. You can also use granulated sugar too.
  • Sea Salt: Sea salt balances out the sweet flavor.
  • Spices: Cinnamon and nutmeg add a warm flavor.
  • Egg Whites: Egg whites help the sugar stick to the almonds. They also help them develop a crunchy coating. So don’t skip adding them to this recipe. You can use leftover egg whites from making coconut milk eggnog or keto eggnog to make these candied almonds.
  • Vanilla Extract: Compliments the warm flavor of the spices.
  • Almonds: Use plain, raw, whole almonds to make this recipe.

How to Make Candied Almonds

Making candied almonds is pretty easy. Follow these steps:

Preheat your oven to 250°F. Next, spray a baking sheet lightly with non-stick spray. Set it aside.

Combine the dry ingredients (brown sugar, sea salt, cinnamon, and nutmeg) in a small bowl just until combined.

Next, whisk the egg white and vanilla extract in a large bowl for 1 minute until frothy. Add the almonds to the egg-white vanilla mixture and mix until combined.

Sprinkle the brown sugar mixture over the almonds and toss to combine. Next, spread the almonds on the prepared baking sheet in an even layer.

Bake them for an hour, flipping them over every 15 minutes. Take the almonds out of the oven and flip them over. Let the almonds cool completely before enjoying them.

How To Tell When Candied Almonds Are Done

Candied almonds are done baking when they are dry. The almonds should be covered in the sugar mixture. If your almonds are still wet, stir them and spread them into an even layer. Bake them in 5-minute intervals, stirring every 5 minutes until they are completely dry.

Tips For Making Candied Almonds

Use raw almonds. They have the best crunchy texture. Roasted almonds may soften as they bake.

Add 1/4 or 1/8 teaspoon of cayenne to the dry ingredients. It will give the almonds that sweet heat flavor.

Keep an eye on the almonds in the last 5 minutes of baking time. If you overbake them, they will have a bitter flavor. Remove them from the oven as soon as they are dry.

Can I Use A Different Nut To Make This Recipe

Yes you can use any nut you want to in this recipe. I have a candied pecan recipe that uses the same ingredients. But you can also use walnuts or your favorite nut in this recipe.

Storing Candied Almonds

You can store the candied almonds in an airtight container at room temperature for up to 2 weeks.

You can also freeze the candied almonds. Put them in a freezer-safe container and freeze them. They will last for 3 months. When you are ready to eat them, let the almonds thaw at room temperature, and then enjoy!

Ingredients

  • ¾ cup brown sugar

  • 1/2 teaspoon sea salt

  • 1 1/2 teaspoons ground cinnamon

  • 1/4 teaspoons ground nutmeg

  • 1 large egg white

  • 2 teaspoons vanilla extract

  • 16 oz. whole raw almonds

Directions

  • Set the oven to 250°F, then grease a baking sheet lightly with non-stick spray and set it aside.
  • Mix the brown sugar substitute, sea salt, cinnamon, and nutmeg in a small bowl until combined.
  • Place the egg white and vanilla extract and whisk them for 1 minute until they are frothy.
  • Add almonds and toss to coat them in the egg whites.

  • Put the almonds on the prepared baking sheet and spread them into an even layer.
  • Bake the almonds for 1 hour, stirring every 15 minutes.
  • Remove the almonds from the oven, stir them one more time, then let them cool completely.
