Fig Jam Orange Muffins (Gluten-Free)

These fig jam orange muffins are perfect for breakfast, brunch, or an afternoon treat. They are easy to make and gaureenteed to impress your loved ones.

Ingredients

  • Gluten-free all-purpose flour
  • Baking powder
  • Salt
  • Monk fruit sweetener- You can use any sweetener you like.
  • Orange zest & juice
  • Eggs
  • Milk: I used evaporated milk. Use any milk you like.
  • Vegetable oil
  • Vanilla extract
  • Sugar-free fig jam

How To Make Fig Jam Orange Muffins

Mix the dry ingredients (gluten-free all-purpose flour, baking powder, and salt) in a medium bowl until combined.

Mix the monk fruit sugar and orange zest in a large bowl for 1 minute until combined. It will help release the oils in the orange zest.

Next, add the remaining wet ingredients except for the fig jam (orange juice, eggs, milk, vegetable oil, and vanilla extract) to the monk fruit sweetener and mix until combined.

Combine the gluten-free flour mixture and egg mixture.

Wrap the fig orange muffin batter with plastic wrap. Let it sit for 30 minutes. It will allow the gluten-free flour to absorb some of the liquid in the batter.

Preheat your oven to 400 °F. Line a 12-cup muffin pan with silicone muffin liners or paper liners and spray them with nonstick spray.

Scoop 2 tablespoons of muffin batter to each muffin liner. Place a teaspoon of fig jam on top of each muffin and swirl it into the batter with a butter knife.

Add the remaining batter on top of the muffins. Top with another teaspoon of fig jam. Swirl the jam into the batter with a butter knife.

Bake for 18-22 minutes until a toothpick inserted into a fig jam orange muffin comes out clean.

Let the fig orange muffins cool in the pan for 5 minutes, then place them on a cooling rack to cool. If you are using silicone muffin liners, remove the muffins from the liners before placing them on a cooling rack to cool.

How Long Do Fig Jam Orange Muffins Last?

If you have leftover fig jam orange muffins, place them in an airtight container. The muffins will last for 2-3 days at room temperature.

You can also freeze the fig jam orange muffins. Wrap each muffin individually with plastic wrap, then place them in a ziplock bag. Freeze the muffins for up to 3 months.

  • Add a teaspoon of fig jam to each muffin and swirl it into the batter with a butter knife.
  • Add the remaining batter on top of the muffins.
  • Top with another teaspoon of fig jam. Swirl the jam into the batter with a butter knife.
  • Bake the fig jam orange muffins for 18-22 minutes until a toothpick inserted into a cranberry orange muffin comes out clean.
  • Let the fig jam orange muffins cool in the pan for 5 minutes, then place them on a cooling rack to cool. If you are using silicone muffin liners, remove the muffins from the liners before placing them on a cooling rack to cool.
