This holiday eggnog bread with almonds is the perfect holiday bread. You get to use up leftover eggnog and create a moist bread with crunchy almonds and a sweet glaze on top.

It is light and fluffy with the perfect amount of eggnog flavor. Trust me, one slice won’t be enough. Everyone will be coming back for more and more eggnog bread once they taste this delicious bread.

  • Gluten-Free Flour. This seggnog bread recipe uses a combination of gluten-free flours. Gluten-free all-purpose flour provides structure and helps the loaf hold its shape. Almond flour, which gives the bread a sweet, slightly nutty flavor. Oat flour gives the bread a lighter, fluffier texture. It also has some starch, which can keep the texture of the eggnog bread from becoming so crumbly.
  • Eggnog. Eggnog adds a rich flavor to the bread. It adds moisture, while the warm notes of nutmeg make each slice taste festive and cozy.

Ingredients

  • Bread:
  • 1 cup gluten-free all-purpose flour

  • 1/2 cup oat flour

  • 3/4 cup almond flour

  • 3 teaspoons baking powder

  • 1 ⁄4 teaspoon salt

  • 1 ⁄2 teaspoon ground nutmeg

  • 1 ⁄4 teaspoon ground cinnamon

  • 1 1⁄4 cups eggnog

  • 1 cup granulated sugar

  • 1 ⁄2 cup vegetable oil

  • 2 teaspoons pure vanilla extract

  • 3 large eggs, room temperature

  • 1/4 cup sliced almonds

  • Glaze:
  • 1 cup powdered sugar

  • 1 ⁄8 teaspoon ground nutmeg

  • 1 ⁄8 teaspoon ground cinnamon

  • 1 teaspoon vanilla extract

  • 2 –4 tablespoons eggnog

Directions

  • Bread:
  • Set your oven to 350°F and let it preheat, then grease a 9×5-inch loaf pan with nonstick cooking spray.
  • Place the gluten-free all-purpose flour, oat flour, almond flour, baking powder, salt, nutmeg, and cinnamon in a medium bowl. Mix until combined.
  • Whisk the eggnog, sugar, vegetable oil, vanilla extract, and eggs in another medium bowl until combined.
  • Add the gluten-free flour mixture to the eggnog mixture and mix until combined.
  • Pour the eggnog quick bread batter into the prepared loaf pan and sprinkle the sliced almonds on top of it. Bake the eggnog quick bread for 50-60 minutes until a toothpick inserted into the quick bread comes out clean.
  • Let the eggnog bread cool completely.
  • Glaze:
  • Whisk the powdered sugar, vanilla extract, and eggnog in a small bowl until a thick but pourable glaze forms.
  • Drizzle the glaze over the eggnog bread and let it sit for 15 minutes until the bread absorbs the glaze.
